Baking is a word that is used to refer to a technique of
prolonged cooking of food through dry heat that acts by convention and not
through thermal radiation. Baking is usually done in an oven, hot ashes or hot
stones and is the major method used in making bread, cakes or pastries.
The Institute of Baking and Cake Art (IBCA) (www.ibcablr.com)
provides specialised training for pertinent aspects of domestic, commercial and
creative bakers. The Institute has its own in-house faculty and invites
specialists in the area of study to ensure that the learners get the best of
information and knowledge. The Institute conducts programmes for durations
ranging from three days to 14 weeks. The capstone programme is the 14-week
Diploma in Baking Confectionery and Cake Art (DBCCA) which attracts learners
from far and wide.
